A Message From Michelle Goldman,
Founder of the Sea Change Cooking School:
Throughout my life I dabbled with different ways of eating. To the detriment of my health, my goal was usually to eat less, or diet. I did not really consider food as nourishment. In 2004, I was diagnosed with ulcerative colitis. Doctor after doctor told me that nutrition had nothing to do with managing this condition. Since this is an illness of the intestine, I could not imagine that idea was accurate. I set out on a course to find people and information that could help me feel better. I consulted with nutritionists, healers, doctors, and friends who also experienced this autoimmune disease. The advice was at times confusing and overwhelming. For example, well meaning nutritionists would suggest that I “eat a sweet potato at every meal” to draw water into my intestine. Some doctors recommended a series of medications and ultimately a very strong drug that was intended for patients who had undergone a kidney transplant. I declined the severe medication because I was concerned that it would impact my fertility and my unborn children. After many years I found experts who validated my hunch that nutrition and wellbeing were of course related. My personal experience was a testament to this concept. I established a way of eating and living that allowed me to feel great, take minimal medication, continue my active life, and give birth to and raise two wonderful girls.
Every individual is different and requires a unique way of eating and living that may vary with time and circumstance. For me, I have found that a gluten free diet with plenty of vegetables and fruits, lots of fish, some meat, poultry and eggs, helps me to maintain my wellbeing. I recognized through my experimentation and the people I met along the way that there are many individuals who thrive on vegan, raw food, Paleo, and macriobiotic diets to name a few. My goal is to introduce people to the possibility behind these ways of eating and to encourage clients to experience the benefits that result from utilizing food to improve wellbeing.
I recognized that there was a gap between the recommendations of nutritionists that focused on calories and nutrients and the perspectives of chefs who discussed technique and flavor. I decided to pursue knowledge that could provide a holistic view and give people the tools and encouragement to create delicious food that would benefit their health.
